5 Spring Inspired Recipes You Can Make in Your RV

With spring just a day away RVers are itching to get out and enjoy the coming warmer weather. From blooming flowers to baby animals spring brings much to look forward to. What’s better than celebrating the new season, than by cooking up some delicious meals that honor spring? We put together a list of 5 great spring inspired recipes that are delicious and easy to prepare.

Salmon Sandwiches

Salmon lox or smoked salmon

Fresh tomatoes

Everything bagels

Capers

Cream cheese

Spread cream cheese on either side of your bagel. Top with capers (it’s important to do this before anything else because it keeps the capers from rolling off), tomatoes, and lox. Cut in half and enjoy! If you are looking for a hearty breakfast or brunch, you’ll love this sandwich.

Spinach and Cherry Salad

1 bag of washed baby spinach

A large handful of dried cherries

Blue cheese – you can substitute for feta if you prefer

A large handful of raw pecans

Grilled chicken breast – Optional

1 clove pressed or crushed fresh garlic

1/4 cup olive oil

1/4 cup balsamic vinegar

In a large bowl combine spinach, dried cherries, cheese, pecans, and chicken breast. In a separate bowl whisk together olive oil, garlic, and balsamic vinegar. Pour over salad and toss. Season with salt and pepper to taste.

Zesty Asparagus

1 bunch of asparagus

1 lemon

Salt and pepper

Olive oil

Wash and dry your asparagus. Toss with olive oil, juice of lemon, and lemon zest. Roast in oven at 350 degrees or grill until tender.

Grilled Flatbread Pizza

1 package of flatbread

Toppings of your choice – pepperoni, ham, pineapple, green bell peppers, sausage, jalapenos, basil

Sauce of your choice – Pesto, marinara, alfredo

Cheese of your choice – mozzarella, cheddar, goat cheese

Olive oil

Brush both sides of your flat bread with olive oil. Spread your sauce of choice, top with toppings, then follow with cheese. Pop on the grill for 20-25 minutes and enjoy! This is a great option for families with small children who would enjoy making their own pizza.

Mustard Crusted Potatoes

2 lbs russet potatoes

1/4 cup yellow mustard

1/2 stick of butter (you can sub with 1/4 cup olive oil)

1/2 teaspoon tumeric

1/2 teaspoon of black pepper

1/2 a bunch of parsely

1 teaspoon salt

4 strips of cooked bacon chopped up

Toss potatoes, seasonings, and bacon and place on a flat baking sheet. Preheat oven to 450 degrees and bake for 40 minutes. If you don’t have access to an oven you can place these in foil and toss on the grill.
