Camping Recipes

When camping in an RV, toy hauler, fifth wheel or travel trailer from an RV dealer in Texas, you may want some recipes for times when you can’t cook outside. Most RVs have three-burner stoves, but the stoves are smaller, and it’s hard to fit large pans onto the stove. One-pot meals, especially if a family of four or five is camping are the best. The cook could also make enough to have leftovers, which could be heated up quickly in the microwave for lunch.

American Chop Suey

1 pound ground beef
Salt to taste
Pepper to taste
2 medium green peppers
1 small red pepper (optional)
1 large onion
1 pound dry elbow macaroni, twist macaroni or shell macaroni
1 large can crushed tomatoes
1 large can tomato sauce
Garlic powder to taste
Cayenne pepper to taste

Brown the ground beef with salt and pepper to taste. Drain the beef and set it aside.

Boil the noodles until al dente. While the noodles are boiling, medium dice the peppers and onion. Set them aside.

Drain the noodles. Set the noodle pot on low heat. Add the crushed tomatoes and tomato sauce. Add garlic powder and cayenne to taste. Add the hamburger and the noodles. Mix well, then let it heat for 30 minutes, stirring occasionally, so it doesn’t burn. Five minutes before serving, tastes and add garlic powder, salt, pepper and cayenne to taste.

Serve with grated parmesan cheese and garlic bread. If you like to make your own garlic bread, melt a half stick of butter and garlic powder to taste in the microwave. Toast the bread in the oven. Spread the butter and garlic mixture over the bread. Add spreadable cheese and put it under the broiler until the cheese melts.

Other one-pot ideas are hearty soups made with chunks of beef, potatoes, carrots and onions. Use a good beef stock or make your own. To make a stew, add cornstarch to the mixture. Use 3 Tbs. Cornstarch plus 3 Tbs. Water mixture per half gallon of liquid. Allow the stew to come to a boil after adding the cornstarch, then turn the heat down to keep the mixture hot without simmering. It will thicken on its own within a few minutes.
